here's the beef!

We recently chipped in with some other families in our homeschool group to purchase a whole cow from a local meat processing plant. The processor made all the cuts and wrapped and labeled everything. They even split all the cuts evenly between the 4 families and boxed them up for us.

We ended up getting a quarter of the cow, (think half of a side of beef), and it cost us approximately$2 per pound. We got LOTS of ground meat, some stew meat, several roasts, a few different kinds of steaks, and even two livers. (Yeah... I think I'm gonna see if my neighbor wants those.)

I think I'm going to enjoy bypassing the meat department at the grocery store!

So how many pounds did you get. We've been thinking about doing this. The meat is so much better than the grocery store. We have a guy at our church who's brought in part of his slaughter and given it to the staff. It has lasted me months and months.

We got at least 45 pounds of ground meat, plus all of the other stuff - I'm guessing at least 100-150 pounds total. It's definitely good meat. I'll let you know in a few months if it was worth it...

Sounds like a great deal. So did you clean out the freezer before snapping the picture or is it always that organized?

Um, the freezer was brand-new. Just bought it for this purpose.

We've been really enjoying this beef, although we haven't used much of it yet, aside from the ground beef. But it's SO lean & tender that I don't even have to drain fat off of it when I brown it. And it doesn't get rubbery like the storebought stuff. Don't know if we could go back...
